Oatmeal Pizza Rolls
Okay, y’all, I hope you’re ready.
Yesterday was a special day celebrating and getting together with loved ones. No doubt we will celebrate some more in just two days! :) Happy Thanksgiving all!!
We got to get in some good snuggles and bake some yummy things. I’m thankful for days like these when we slow down and just appreciate and enjoy the simple things.
Food is such a comfort to us all, and this recipe of oatmeal rolls is one my momma made us a few years ago. I remember it being so darn delicious and just never getting around to making them until I burned some brown sugar on the stove! :)
Yep! Just yesterday, I was making some oatmeal for our littles and decided to add in some brown sugar like I’d seen (or thought I’d seen lol) my grandma do when I was little. Turns out, and if I had read the instructions I would know this, you add in the brown sugar after the oatmeal is cooked! :) Good to know!
So anyway, I was taking out the burned bits of brown sugar, and then decided, I’m gonna make those rolls. Todays the day. :)
So I got to work removing the healthy and whole oatmeal, all cooked up and yummy and placed that there in the metal bowl set beside me. I don’t know why, but I like writing all funny and funky and relaxed and incorporating all sorts of inappropriate grammar… bear with me.
Here’s an example of fine writing, as my college professor would tell me: With precision, empty the contents of said cooked oatmeal, into the mixing bowl.
Okay, that actually wasn’t fine. My professor has also let me know that I should really have people read my work before I submit or publish it.
What can I say, I’m a fly off the wall. It’s not too pretty, and it’s not always wanted, and it’s probably something you just end up squishing, but I write it anyway. I write what feels right. Not what looks it.
Anywho, so back to these rolls! I’ve been wanting to make these delicious rolls since my momma made them for us. It turns out you start by cooking the oats, as I recall her telling me. So I poured my cooked oats into my mixing bowl and set that aside to cool.
Then I pulled up the Taste of Home page for Oatmeal Rolls: https://www.tasteofhome.com/recipes/oatmeal-dinner-rolls/ and got to work cooking. :)
I added some warm water, about 1/3 of cup, to a mixing bowl and about 1 1/2 tsp yeast. After a few minutes, I poured in about 1/4 cup brown sugar (I figured my oatmeal still had some sweetness to it :)) and 1 tsp sugar. Then I stirred around and set that aside.
Returning to my oatmeal, I added 2 TBS softened butter and stirred that in. Then, making sure my oatmeal was well cooled, I added that directly in with my yeast water. Stirring all together, I added in about 5 cups flour and about 1 tsp salt, a little over. Mixing all together, I asked my sister to spray a separate, larger bowl for me, and then we placed the oatmeal, roll dough inside. We covered the bowl with a spray of oil and let rise for just over an hour.
Kiddos played, mommas rested, and eventually (after washing off all the lovely doggy hair from all the sweetie pies cuddled) we rolled the dough into just about 18 rolls. We placed these in two pie pans, which I rubbed with olive oil, and then we let those rise for 45 minutes or so.
My sister ran to the store and picked up some delicious treats for us of macaroons and cheesecake, sisters are the absolute best for treating each other, and for helping out with each others kiddos. We have each others backs. π
She really went to the store though to pick up some pepperoni and smoked Gouda cheese. After putting our rolls in the oven to bake, for about 30 minutes, she got to work chopping the cheese into bites and I set to mixing some paste.
I started with a simple can of 8oz tomato paste. Then, adding some zestier ingredients like garlic salt with parsley and all the familiar Italian seasonings. This is my go to for pizza sauce. You guessed it! We’re making pizza… rolls. :) savory and sweet!!! Two favorite things!
Adding in some garlic infused olive oil (sister’s contributions are so artful and fun!) brings the sauce together into a thick, but moveable paste.
The rolls came out and they look wonderful! I highly recommend burning your oatmeal and making rolls instead. ☺️π₯°πππ grace.
Taking a serrated knife, I sliced open one pan of baked rolls (leaving the other pan, plain, to cool) and used my spatula to move around some paste on each of the 9 rolls. Then I added about two slices of pepperoni to each roll, and topped that with a sprinkling of chunked cheese. Then, covering the rolls with their tops, I placed a few more sprinklings of cheese all throughout the rolls to kind of glue them together.
Placing this pan back in the oven, I gave them just 10 minutes to goo and warm. So nice seeming them come together and ooze deliciousness all over.

If you just feel like making the rolls today (or for thanksgiving, I highly recommend Taste of Home’s recipe page above) you can just bring them out of the oven after their original 30 minutes and top with some honey butter.
You absolutely can’t go wrong. These are delicious, hearty and make you feel so capable as a person caring for a home!
Enjoy your thanksgiving gatherings, even if it’s just with your coffee shop friends or if you find yourself snuggled next to a library shelf at someone’s large gathering within their home… know that wherever you are, you are safe. You are known. You are loved. You are treasured. You are secure. And nothing, nothing in this world or the next, can every separate you from the love of God which is in Christ Jesus our Lord.
I’m not a perfect writer (I almost spelled that righter) y’all. Far from it. I just write my heart out and pray it warms you on your coldest hour… I don’t want you to have to walk through anything in this life alone, so I pray you know that the hope of our Lord Jesus is all you need to get by in this world and the next. You just trust him with your heart, ask forgiveness for the things we all do wrong all day long, and know that He loves you… and he’s in your heart. You are saved dear one, believing in Him, that He died on the cross, carried our burdens, and set us free from doubt guilt and shame. We’ll never be enough, but Jesus, He doesn’t ask us to be. He just needs us to trust Him. And that’s all I’m gonna do.
